This. You can see it in the shrimps eyes and can essentially tell their time out of water in 24 hour time increments by the color of their eyes. 3 days is about the max you want to keep them out for maximum freshness. Quite often in the grocery stores around S Louisiana you'll find them ranging in the 3-6 day range.

Grocery stores like to display them on top the ice for presentation. Only problem with this is that the go bad quick like this. Heads turn black on iqf's and orange on fresh shrimp this way.
Best way to keep them is in ice water. Keeps them colder and bacteria from growing on them. They will stay nicer looking for a few more days usually this way.
