A lot of places serve some kind of weird bug critter. They boil them first. I think they're aquatic. They're all bright red and gross-looking.
Those coonasses must have been some hungry people to figure out you could eat that.

Not really. Alot of the people in S. Louisiana made their way from the area that is now Nova Scotia and Norther Maine. People up there seem to eat a larger version of the same critter you are referencing. I suspect the first cajuns and others were thrilled when they found an abundance of tiny lobsters down here
