You can be a non-Catholic godparent as long as the other godparent is Catholic and the non Catholic is a baptized Christian.

The amount of misinformation in this thread for Catholic-filled South Louisiana is crazy

I was told (have mercy) by my wife who looked into it that while this is true, technically the child would only have one official godparent, the Catholic of the two; that the non-Catholic would not be listed on the official church documents.

According to these official looking links, you are wrong. Eta: to be fair, it's just a little more nuanced than that. The non Catholic Sponsor is really just a "witness" to the ceremony.
