Fish en papillote looks fancy even though it is easy as hell to make. I don't know what kind of fish selection Rouses has, but you can use this method on most fish.

I like to make Mr. B's BBQ shrimp for date nights sometimes. It is also ridiculously easy (just don't overcook the shrimp) and takes about 5 minutes.
