They didn't have the photos. Remember, there was no Google image search back then. Would have been a couple of guys going through old magazines and newspapers.

Short answer: because the lawyers for the Goldman's were way better in the civil trial than the prosecutors in the criminal trial. Dream Team put a beating on the prosecutors like it was USA vs. Angola in basketball. They also had more time to build the case in the civil trial. They went back and found the photographer in Buffalo and got the negatives from his attic IIRC.
