I disagree in regards to fried chicken. There is some fried chicken, such as Gus's in Memphis, that is wayyyy better than anything else I've had. There are many levels of fried chicken, at least in my world.

I also haven't found any places, soul food or other, in the South and especially not in Louisiana, that has chicken and waffles and all of the other extras that Roscoes has (the gravy ñ' onions, giblets, livers, etc) If you know of any, I sure would be interested to hear them.

Because chicken and waffles isn't really a southern thing.

All of the rest is very much a southern thing that you can find at most plate lunch joints.

I just dont think there are many levels. Chicken itself is pretty bland. There just isnt that much you can do to fried chicken that could separate itself from the crowd of fried chicken available all over here. Plenty of people say their favorite fried chicken is popeyes and are dead serious. That should tell us how basic of a dish it is.

maybe not waffles. that seems to be specific to a certain places that just market themselves specifically as that.

all the sides and other items should be at places like dorothys, pappas, etc. just google tigerdroppings soul food
