Can you explain a quick history there? I was there for an interview and stayed at Parc England hotel. The jets display was really cool.

It used to be England AFB. You can still see barracks and other buildings around there. A10's were stationed there at one time, and A7's before that.
To the OP, you will see military personnel there every day; individuals flying commercial to and from Ft Polk, as well as entire units flying in on military aircraft for rotations at the JRTC. I think any fighter you see is likely to be a stopover, though.
A good place to see combat aircraft is the Laffy airport. There's a maintenance facility there that does a lot of military overhauls. I've seen Apache and Blackhawk helicopters there, and even Air Force One.
