We normally don't keep any but one year we did keep one set and had each side cut into 4 parts. Froze them and used in spring/summer for crab bait. Cheaper than melt or chicken.

I smoke at 225-250 like pork ribs, but pull them off at 2-2.5 hours instead of 3.5. They're skinny, but they have flavor. Woman even eats a few.

Or cut off the bones and fry for long skinny deer fingers.

I like to drink beer and man cooking apparatuses in the offseason though so it gives me a cheaper run at it.
