Went this past summer. Where are you staying? Do you plan on renting a car? What's a "long weekend"? I went for 13 days and feel like I should have spent a month

Yep. Minimum needed to just see the south is 7 days. That's what we're gonna do in February but really our main goal is seeing the northern lights. Taking my gf and two friends who have never been out of the country so should be a fun time to take them around but in the summer a month is needed to see most of the island. But it will also cost you. Air BnB is great in Iceland. There are plenty of places for under 100 a night when most of their hotels are very expensive. Luckily we still have family all over the island so we never have to pay for a spot but it can get very expensive very quick.

I went in September for a week. It was incredible and would go back plenty more times. If you're into hiking, check out the Laugavegur trail.
