I own a travel agency and it isn't a slam dunk that they'll rebook or refund you with the small change in arrival time. They won't always factor in number of connections of your change is only an hour or two.

If they will refund it I would go with the nonstop charter available during the summer out of New Orleans to Cancun. Nonstop, includes a bag, and as a charter it won't reschedule to a connecting flight. Most scheduled dates is running right at about $400 per person.
