What do you mean in-house cheese? I think it would be more expensive for them to make all of that in house.

Maybe. Never made cheese in bulk.

Many charcuterie shops will offer their own house made products with some supplementary products sourced from various places.

I know when they opened they mentioned they were hoping to have their own products one day, but they didn't at the time.
