Butternut squash recipes...

I bought some Butternut squash today. I have had it before and enjoyed it but I can't remember how it was served. Can anyone share any recipes? Thanks

I love roasted butternut squash. Simple and delicious. Peel and cut into chunks. Toss in olive oil. Put on a baking sheet, season with s&p and bake at 400 until golden brown and tender. I toss them after about 10 minutes or so.

I like the butternut squash sprinkled with a little nutmeg, prepared exactly the same way.
At Red Gravy in NOLA, I had a butternut squash and pasta dish that had a light white sauce and a fried egg floated on top. It sounds weird but it was so delicious, it brought on a mild case of insanity.

Nice list.. One of those recipes though, calls for Rosemary.. To me, Rosemary tastes like Pine Sol.

I had one last night and steamed it.
I cut the neck and chopped it into round pieces and then halved them. With the body of the squash, I halved it and then gutted it. Once removed, I chopped into smaller pieces. I put all in the steamer (skin too) for about 15 minutes. Add s&p to taste.
