I think that technically what we tend to think of as mexican food isn't really authentic mexican food. It's tex-mex. But whatever. Who cares. What we think of as Chinese food or any other ethnic food probably isn't typically strictly accurate. Food is something that evolves based off of taste. Hard rules for something like that are pretty stupid.
