We were at disney two weeks ago. Pecos Bills just changed their menu to texmex. No idea how good it is.
Rainforest Cafe at Animal Kingdom is good. Expensive, but good. Cool place.
Dinosaur! at Downtown Disney is also very cool for the kids.
Both those last two will cost you around 100 for a family of 4.

There's also the Rainforest Cafe at Disney Springs.

T-Rex Cafe is good too, created and run by the same people that do Rainforest.

Rainforest Cafe is everywhere in the US. I prefer more unique to Disney places.
