But unless you lived there you wouldn't know. I haven't seen any nationally televised TV shows with celebrity chefs doing segments on the Veit food in Houston. Maybe I just missed them. Bigger isn't always better silly Texans.

If you go by % of population
Houston- 1.7%
Nola- 1.4% and increasing
You are missing the point. Its about the amount of people, its about what that community brings to the culinary table.
If I have to explain to you why the Vietnamese are such a huge part of Nola's culinary makeup then you dont know the seafood industry at all.
