Not really

There are a lot of other metrics like turnover margin, total yards, red zone success that could be deemed very important.

The fact that he discovered there was that strong of a correlation between this one statistic is pretty interesting.

The same holds true for this metric as the ones you listed. They are all correlates of one another and indicators of performance. It would be foolish not to have a goal to increase the big plays; however, if the sole focus is on that, at the expense of other aspects (e.g., ball security in a hook and ladder; more 3 and outs) then the 81% win probability would likely decrease.
