If you do the grout yourself (which is really easy), Seal it first.

Go buy thin set, tile, and grout you want. Go to a new construction job site in nice area where tilers are and flash a $100 bill to one where you see nice tile work being done. Tell them once finished you'll give them another $100.
In this market subs, especially good ones, are working with builders keeping them busy so they don't go elsewhere. Borrow one for a few hours and make it worth his time.
This is assuming you are not doing something extremely intricate tile wise.
