Egg rolls seem easy enough. I might use their Nuoc Mam Sauce in lieu of the sweet chili sauce

Beat me to it.
These eggrolls are the next best thing to homemade ones.
Another suggestion in lieu of eggrolls would be crab and corn egg drop soup(sup bap cua) or sugarcane shrimp(chao tom).
For dessert, if you want something simple, Vietnamese iced coffee with condense milk(Ca phe sua da) or adventurous Asian fruit cocktail(Che Thai).

1. Go the frozen section in an asian market up and pick up a pack of LINK / . Each pack contains about 50 mini egg rolls (as good or better than homemade).
Thanks for the advice on this. They had these at the market in Corpus Christi. I served this as one of many things in this crazy feast I put together. I did it in the oven, I think I'll fry next time.
Only did the oven because I was frying some shrimp and was running out of space on the stove
