I don't want to jinx the festival, but we have yet to have any incidents of any criminal activities occurred ever since the new younger group of church volunteer that taken since Katrina. The fest is very interesting, entertaining, secure and must visit!!!

You should hit the fair during the day time for the local american cover bands. Groovy 7 is easily one of the best and most popular of the local cover bands. They have been playing at the fair every year since Katrina.

The pho has been amazing for the last two years (a new head cook took over), the other 8 years its been really awful. The best time to get pho is around 11am - 4pm, this is when the pho broth is at its best (very fatty). The bun bo hue (spicy beef noodle soup) is definitely worth a try.

If you are adventurous enough head over to the tent that is to the right of the stage. Give their goats dishes a try, they prepare the goat in two different ways, but definitely a must try.

There's a seafood tent in the back of the fair. I have a chance to simple their boiled crawfish yesterday and to my very own damn surprised it was pretty yummy. It's pretty much selected size and they will be selling them for $5/lb, that's a bargain. But avoid their charbroiled oysters, its awful.

Now for the sweets/desserts. The same tent that sells the pho/bbh which is the tent to the left of the stage. They sell the only good fried bananas. Another must try are the Pandan waffles. Drinks wise there's a tent that sells Thai Tea, Vietnamese iced coffee and cane juice.



Have you ever tried the other vietnamese favorite noodle soup? Spicy Beef noodle soup, it has a pork bone soup base rather than a beef bone soup base.

Most places serves the crab meat soup without the shark fins, its not a game breaker with/without the fins. Since its a Vietnamese, you are suppose to have a bottle of cognac on each table, but too bad Crystal Palace venues has banned this. FWIW, if you ever get invited to a wedding @panda king. The food there is better and there's no bottle ban.

I finally have a chance to watch the video. I can see why you guys are bashing the video. My setup or steaming method is nothing remotely similar to the video. I have boiling crawfish for a good while, and I still use the same seasoning(soaking)stock recipe for my crawfish. I just prefer to steam cook my crawfish because the meat is much more tender and fuller than boiling crawfish (minimum shrinkage). Basically is the same, if I was boiling to cook the crawfish and then soaking the crawfish in the same pot. But instead I just have one pot for steaming and another for my seasoned stock. Anyhow the pot that I have for steaming is a stainless steel pot with a ridged ring that keeps the basket 3 inches above the pot. Also I only fill no more than 1 inch of water inside of my steaming pot unlike the other guy. FYI with the steaming pot you can steam a whole bushel of crabs in 25mins.
I am a huge advocate of steam cooking the crawfish and soaking the crawfish in a different pot with seasoning, similar to what unclebuck504 is describing. Takes me only about 12-15 minutes to steam 50lbs of crawfish and an additional 15-20 minutes to soak them.
Nope, there is none that exist in NOLA. The St. Roch is probably the closest thing but that doesnt say much.

Are you and the kiddies coming down this weekend? FYI they expanded the Mother Choir group by giving them an extra tent, there's a few new dishes on the menu, also Groovy has a new member.
Please come and enjoy this fantastic event that my local church/community host every year, especially if you guys enjoy Vietnamese food. Its a FREE and VERY SECURED(this actually only time the cops in the east actually do their job) admission/parking event, its a three day event:
Friday 12th 6pm-10pm
Saturday 13th 10am-11pm
Sunday 14th 10am-10pm

Also there's live entertainment that will be playing all day/night. During Saturday and Sunday 1pm-5pm, KARMA and GROOVY 7 will be playing at the fair. (They are two of the best cover bands locally)

People can butcher that fish sauce easily. Sweet chili is a just a safer alternative that's all
1. Go the frozen section in an asian market up and pick up a pack of LINK . Each pack contains about 50 mini egg rolls (as good or better than homemade).

2. Get a bottle of LINK for the dipping sauce.

3. Get some squid and seaweed salad also.
Roasted Beef or Soft Shell crab poboy = Sammys on Elyisan Fields ($10 each!!! what a deal)

Pork Melt or Pork Belly sandwich = Cochon Butcher

Vietnamese Poboys = Dong Phoung
Getting of these should help you reach your health goals more efficiently/quicker. Trust me a HRM will help boost your workouts intensity or be more consistent.
