they will float when they are cooked, they will start to sink when they have soaked enough, take them out sooner than later, nothing you can do with an overcooked shrimp and it happens quick

Fool Proof Method....works every time.
I use this method in my 80qt pot, usually after a crawfish berl...
Bring seasoned water to a boil.
Add shrimp.
Return to a good boil.
Immediately shut off fire.
Add 5 gallon bucket of ice.
Soak for 9 minutes.
Peels like a charm.
