I'm actually going around the same time, I plan on doing Denver one of the days I've been to red rocks, and boulder before. I'm actually going with a group of friends instead of family so I'm expecting the experience to be much different.
I've heard lots of great things about Aspen and Vail, and I do recall some douche on this site making fun of people who complained when they were charged 12 dollars for a bud light; no telling the cost of craft beers out there.

In the winter the resorts are really fun since they have bars and restaurants in walking distance, but how do they compare in the summer?

They're pretty reasonably-priced. There isn't any sort of tourist price-gouging thing going on. I don't know about buying drinks at an outdoor concert, but at the bars, drinks are about the same price you would expect to pay anywhere else.

As I mentioned above about Aspen in the summer, they are great, at least in Aspen (I don't know about Vail). Stay someplace close in to downtown Aspen. Everything will be in walking distance.

just go to Aspen

Bell Up usually has good concerts. The food is legit. Aspen brewing is a fun little place. Plenty of outdoor stuff as well.
