Man I take the opposite tack with Tuna. I eat as much fresh as possible and give away most of the rest. Whatever I freeze I try to eat within a month or two max. Snapper, grouper and jacks taste delicious even after 9mo in a freezer. Assuming the vacuum bag doesn't get a hole in it.
I agree. I've noticed frozen YFT is kinda useless by 6 months. I just eat what I can and give it to people.

It's cause oil doesn't freeze in a freezer. Tuna are very oily.
Frozen tuna recipe (not more than a month frozen) - defrost and cut into cubes when they are still semi-frozen, batter and fry. It's like eating raw fried tuna, yum. I prefer raw and not fried, but it's something different to try.
Another good one is semi raw tuna, cubed, thrown in a small pot pie dish with pie crust, with ranch dressing, bacon bits and fried onions on top. Cook in the oven on 3 fifty for 15 minutes.
