With the exception of YFT, Wahoo, Cobia really don't like to freeze fish to eat later fresh is so much better.

Man I take the opposite tack with Tuna. I eat as much fresh as possible and give away most of the rest. Whatever I freeze I try to eat within a month or two max. Snapper, grouper and jacks taste delicious even after 9mo in a freezer. Assuming the vacuum bag doesn't get a hole in it.

You talking amberjack I'm guessing......If you haven't tried small 5-8# jack crevalle on the grill it's freaking great.

Never would have believed until a friend of mine was doing a show down in the Keys with Andrew Zimmern while I was down in Islamorada(yes Bizarre Foods ) He caught a jack & insisted on keeping it, when they got back Zimmern cleaned it & threw it on grill...I was surprised as hell at how good it was.

I agree. I've noticed frozen YFT is kinda useless by 6 months. I just eat what I can and give it to people.
