This just hit me...
Saute some diced mushrooms in butter.
Add chopped spinach.
Simmer down.
Add heavy cream
Salt and Pepper
Reduce to thicken.
Use to top your toasted and oiled (or buttered) bread.
Sprinkle some Parmesan cheese on top.
