I peel and score the onions and they go in right after the seasoning and the lemon, right before the garlic and potatoes, so right after i light the burner.
I can't remember doing hot dogs myself but I add smoked sausage at flameout, loose, and let it soak with the crawfish. I also add the artichoke at this time. I do not add ice to the water so they soak 20-30 minutes in hot water.

I just cut the onions in half. I don't peel them. I don't do hotdogs.
