If I started being immortal in the Middle Ages - I'd be set for life right now.
Woulda done things like go on Crusades, travel the spice roads... Get things from faraway places and set up my own little trade empire. When science became a thing - Would've started getting involved in that.
Endgame: Use my wealth to screen for the brightest minds to put through school and eventually work in R and D... Then sell technology to military, healthcare, etc... to perpetuate my own little self-sustaining system. Invest in more things like gold, diamonds, antiques (the more ancient, the better) artwork, etc... to decorate all my residences around the world.
Would also make sure to find a way to scramble film/digital cameras so I wouldn't show up in pictures decades apart.

If I haven't learned at least 20 languages in that time - I'd be surprised.

I think that would be a dangerous path. You'd need to live without calling attention to yourself-there's this uber wealthy person who's been alive for as long as anyone can remember, and never seems to age-somebody would get suspicious, and that leads to trouble. Even if they couldn't kill you, they could arrest you and "study" you, or just keep you in confinement because they think you're dangerous. I think the only way you could get away with it is live a normal lifespan as a relatively anonymous person, then drop out of sight and assume a new identity somewhere else.
There have been any number of sci fi plots about this
