Co-worker of mine asked Jerry Lee last year about the ratio of pork meat to liver in his recipe, and Jerry claimed to not use any liver......

Jerry lees is very good if you enjoy a milder boudin with a lot of green onion. I like it a lot and their hog head cheese is phenomenal.
