May be a foolish question but what is the best way to "scale" the trout? I have either fillet the fish or leave scales on for grilling (redfish and such.)

Scrape the fish with a spoon, tail to head. White Perch, Bream, Flounder as well. Redfish are much more difficult to scale than the others.

Back years ago, we would use nozzle on hose to "spray' the scales off from tail to head......if I remember correctly it worked pretty well.

honestly, a car wash wand. we’d take our fish, lay em out, step on the tails and wand them with the pressure on rinse as we were cleaning the boat. will literally take the spots off with the scales without breaking the skin.
only way to clean a flounder for sure.
