Armbars are not inescapable when you outweigh her by almost 100 pounds. And throwing someone 100 pounds heavier is not easy and keeping them down is also hard.
Technique works when you are fighting someone of similar size and strength. It's incredibly more difficult to do the same things when there is a huge size difference.
