I was coming here to post this. I chicken fry deer steak all the time and my kids think it's the best thing they've ever eaten. And FWIW, I don't refrigerate after I flour them...just drop them in the deep fryer at 375°.

Bad thing about deep frying versus the iron skillet is that you won't be able to make as good a milk gravy to go over the mashed potatoes that are the required side dish with CFS. And I've floured and dropped, but leaving them sit in the fridge makes a significant difference in the batter sticking IMO. Obviously restaurants don't have that luxury. That is, the ones that aren't dropping the pre-breaded Sysco version.
