I've always used a skillet with oil halfway up chicken and a glass lid because that's how momma does it. Start in hot Crisco, let it cook until time to turn, put lid on for about 6 minutes to cook through then take lid off for it to brown and crisp up.
I had Hattie's hot chicken and didn't like it. It's just too hot for me. Well I did eat it but let's just say it wasn't my favorite.
