I'm very much a beginner, so I'll start with that.
Basically, it's finding little hiding spots out in the public using gps and visual clues. You then will sign the log, and if you're using the app, put that you found the cache.
I like it because I find it a good way to get exercise, as I'll park in an area and just walk to all the caches. It also is a good way to see some local sights. That being said, sometimes I'll put off a cache during the day because I don't feel like getting the police called on me because I'm acting weird.

I like to do the ones out in the woods and rural areas. Last time we were at Orange Beach, we rented bikes and found about a dozen out in the state park along the trails.
Not a fan of the ones in town where lots of people are watching and wondering what the hell you are doing.
