Never done it. Just curious. Thinking of like a situation where you've got tons of experience but it's just a slap in the face for what the company offers you

I was offered $6.50/hr after graduating from LSU. I kindly told them that was simply unrealistic and thanked them for their time before leaving.

Your not hitting on a good reason. I think the only way a normal person would leave in the middle of an interview would be that they are offered a different job than the one they applied for. I've heard of people applying for manager positions and in the interview they say the manager position was filled but they have a less important, less paying job they can offer. A friend of mine had this happen to them but they politely apologized, didn't accept the job, and left.

I have had a couple of times that I told the interviewer that in the course of talking I decided we probably would not be a good fit for each other and preferred to give him the opportunity to use his time talking to another candidate. I was thanked for my candor. No bridges burned. Oddly enough, that person came to me looking for a job about six months later. Evidently, his employer wasn't paying him and kept putting him off.
