re: what do you keep salt and sugar in?

I don't use a lot of sugar. It stays in the bag in a ziploc bag in the pantry save some I keep in the little sugar jar for coffee or small amounts I might use in cooking.

I use David's Kosher salt. I don't like Morton's. I buy the plastic containers of David's and just pour it into my Alton Brown salt cellar, which I wash when empty and refill. No rice needed.
