Here are some factors to consider:
1. Cost
2. Purpose
And my explanation:
1. I always suggest hunting hogs with a 5.56. Why is that exactly? Because I don't think they are worth more money than that. They reproduce like cockroaches and are numerous. If you were to sit in a hunting stand and go for a one-shot kill, I would suggest something larger than 5.56. But if you plan on mowing down groups of them, I would suggest a 5.56. You can put more rounds down range and get back on target quicker. If it takes 5 rounds of 5.56 to put down a hog, it's still cheaper than 2 rounds of 6.8 SPC.
If you want a dual-purpose gun (like hogs AND deer) I would suggest getting an AR10 instead. "AR10" is the term used to describe any AR chambered in .308, in the most basic sense. Some of the guns listed up there ^ are great AR10s. My personal favorites are the S&W M&P10 and the Ruger SR762. Great rifles.
2. This also harps back to #1 since price of ammo will factor. If you're going for a gun you don't mind shooting the hell out of, I would go with a 5.56. Cost per round will be much cheaper than an AR10. If you want a hog/deer gun, I would suggest an AR10 though.
I am not a huge fan of 6.8 SPC or 6.5 Grendel for hog hunting. The reason is mainly cost. These are significantly more expensive than the larger 308 round. If you plan on hunting from a stand and just shooting one, these wouldn't be a problem. But again, if you're going for eradication, I would say stick with a 5.56. Or 308 if you have deep pockets.

My cousin built a 6.8 heli hunting gun for the exact reason you mentioned. How often do you think anyone puts 5 hits on a running pig with any caliber? He has killed hundreds of hogs and he has shot 300blk and 556 and has settled on 6.8 as his pig extinguisher because when it hits, it puts them down.
It is an OB Baller round cost wise though
I personally like 300blk because of the popularity and ammo choices right now. Going with an AR-15 platform vs a ar-10 (.308 ar) platform lends many advantages for multiple calipers run off the same lower receiver as well.
