the prices here seem really high. If you plan and execute you can do it for less than $5k total.
Go in shoulder season if you don't have kids, I think in Italy that is October. The weather should be still nice.
And if you travel in shoulder season, don't book your rooms in advance. show up and you can find much cheaper places. Most hostels in italy have private double rooms, you might have to share a bathroom. You will still pay 100E a night but it won't be 250E people here think it is.
Also you can cook your own bfasts and maybe pack a lunch a day or two. Also, avoid tours they are usually overpriced.

Jesus, no offense but that doesn't really sound like a vacation. I prefer to be pampered when I travel.

If I am going to a place like Italy, I'm not brown bagging it. One of the best things about traveling is trying the destination culture's cuisine.
Also, avoiding tours altogether is terrible advice. Avoiding a lot of tours is good advice, especially in larger tourist cities like Rome where you are almost certain to get taken advantage of, but they aren't universally overpriced and/or a waste of time. My wife and I did a couple of really specific tours while we were there and I thought they were worth every bit of money we spent on them.
If you are in ultra penny pinch mode though, my wife and I met a British travel agent while we were out there and he said that he had downloaded these public domain MP3 tours for free for his group. They come with route maps that you just put on your phone/iPod. Follow the route on the map and the MP3 tells you what you are looking at as you walk. Sounded like a slick plan to me.
