50/50 deer to pork(boston butt) 3 lb box bacon end pieces. One pack of leggs green onion sausage seasoning. Same one Rouses uses for their green onion sausage. Just buzz the butcher and they will sell it to you. Coarse grind everything, mix then fine grind and stuff into hog gut casing
ETA: seasoning is for 25 lbs of meat. My recipe uses 28 due to the bacon.
