There or a few acids that could be the source of that smell but, given enough time, Brett will break those down into fruitier compounds. However, eventually other compounds will get broken down to produce more of the barnyard Brett that people are used to.

That brew was a bit of a miss, it was supposed to have strawberries added to it (if it's the one labeled SFH) but I never did. It ended up in no mans land, it wasn't tart enough without the fruit and wasn't bitter enough to stand alone. However, I had one this week and thought that it was much improved over a month or so ago.

Yes, SFH.....I think it is a good brett beer. I am having no trouble drinking it. Like I said in my text, Bacchus Oud Bruin had the same smell.
