Matco makes some good scanners for around 300-400$. Live data. Fix assist. Code reader with definitions and such. Is this truck a gas burner or diesal. Not familiar with chevy engines. If it's a gas burner sounds like its probaly a coil pack. Start unplugging coils while the truck is running. If motor starts to miss when you unplug one then it is good. If not it is not working. I would try that first

I would've done that, but like I said earlier....it is intermittently consistent. I'm not sure if that would work
