smoking ribs - 3-2-1/2-2-1 technique?

So I got a BGE a few months ago and have been smoking/grilling as much new stuff as I can on it, but I love me some ribs Does anyone use these 3-2-1/2-2-1, etc techniques? I've never done it, but wanted to see if anyone has and if there's that much of a difference between that and just straight smoking them for a few hours. I typically smoke them around 225-250 for about 4 hours, give or take, and I've always been very happy with them, but I know people that swear by the 3-2-1, etc technique.
I've got some St Louis ribs with a Memphis rub on it right now at 250, smoking on apple and cherry, as well as the lump charcoal. Can't wait to pull em off in a few hours.

Stick to your 4 hour smoke on your egg. Can't go wrong.
