Been posting pics in the FBD thread.
Basically Sweet Potato and Tasso taquitos with pico and a sour cream aioli.
The process...
Cube potatoes and boil
Tasso
Together
Used a mixer and whipped it up with some cilantro, lime juice and S&P
Put together an aioli, Sour Cream, vinegar, garlic, grapefruit zest and juice, S&P and red pepper flakes.
AP made tortillas
Seared with the aioli and some fresh pico

So how did they taste? I've had a sweet potato and andouille hash, so I'm betting sweet potato and tasso could be very good.
