I have a similar boat, and run a 24 volt, 74lb thrust MK Maxxum. When crank it up WOT it will fly, can run 2-3 days without needing a charge. That being said, I would say no smaller than 74. If you have the room for it look into the smaller 36v systems. Look into used and save some $, I bought a slightly used 2 yo model for just under half of retail.
ETA: Grats on the boat

I have the same sort of question... Unfortunately I just inherited a boat from my FIL who passed last week. My MIL is basically making me take it. It's a 17.5 aquasport osprey cc (2000) with a 90 etec (2010) on the back. I'd be willing to bet it has less than 20hrs on the motor.
He didn't have a trolling motor on it and I need to get one for this duck season.... Also looking into a power pole as well.
Please spare me the Yamaha stuff
If I were buying one that's what it would have, but it's free...
