Cat 6 not Cat 5.
Wire for whole home surround sound. You can get away with built in speakers in rooms for just stereo, but rooms for sports/tv/movies just wire for the speakers and upgrade over the built ins.
Make the gas line 3/4 instead of 1/2.
Hot water plumbed to the patio.
Exterior receptacles and cable/cat 6 drop for an outdoor tv.
Build out an A/V cabinet in a closet.
Deck the entire attic for storage.

None of the built in av stuff had any appeal to me. You live in a house for a long time....and av tech changes dramatically in ten years, much less 20. Been in a high end custom house from the late 60s? All of the once high tech stuff like room to room intercoms, built in hi-if, and metal grilled speakers everywhere sure do date a place as time passes.

Re wired networks, I don't have an alarm or security cameras, and my broadband wireless reaches halfway up the block. No dean spots in the house. The cables you pull today probably will be obsolete in a decade anyway.

Attic decking is smart, as is a slightly larger attic stair opening. Nothing worse than having beaucoup attic storage but not being able to fit the things you need to store through the bitty pull down stairs.

Easy access conduit. Everything is constantly becoming outdated.
