all great answers and most are in my top all time
what about A Bronx Tale ?
Is Heat considered mob? Probably not, but it's too close to leave out.

another vote for 'donnie brasco'....nice departure from the typically glamorous mafia lifestyle.

State of Grace
Aside from the ridiculous ending, this is an incredible movie, with an incredible cast of top notch actors- Ed Harris, Sean Penn, John Tuturro, John C. Reilly, and, of course, the legendary Gary Oldman.
Someone has already said "Millers Crossing". This is one of the top 10 films of all-time for me, and is the best of the Coen Brothers movies. I'd put it #1 for all-time dialog- you can tell the Coens are huge fans of 1920's/30's snappy mob-speak, and they sprinkle it all over this amazing film from beginning to end. And it was filmed in New Orleans.
