Actually it stands for street, seems when all the streets were laid out they were done in French and it was rue Joseph, rue Ferdinand, etc, when they went to translate they did the literal translation which would be street Joseph , street Ferdinand, and abbreviated with ST. Since then it has just been assumed it was suppose to be saint and it has stuck
