Saturate it with baking soda and leave for a couple days. Vacuum up. Then, drench it with diluted Odo-Ban and shop-vac it up. That is your only hope.
How do I know this? When my husband (then boyfriend) and I were both at LSU, a similar thing happened. He'd been shopping at his dad's grocery store and ended up slamming on brakes before he arrived back at his apartment. Groceries were all over the back of his car. He THOUGHT he picked everything up.
Fast forward about 2 weeks. He adjusted his seat, and our sinuses were assaulted by the most heinous stench imaginable.
As it turned out, he'd left a vacuum-sealed package of crawfish tails under his seat when he picked up the groceries. (He didn't miss it because it isn't like he had to pay for his groceries back then. His dad let him shop for free.). When he adjusted his seat, something hit the bag of crawfish tails and released the most godawful smell of rotten crawfish you can imagine.
Unfortunately, I was in his car when this event occurred. I had to hang my head out the passenger window for about a mile until we got to my apartment.
Believe it or not, the baking soda and Odo-Ban worked pretty well. It took about a week for the smell to completely subside. He later sold the car without any odor problems.
