No, I mean the residual water after you pat dry the fish. So I filet the fish, the pat them dry, then put them in bag. I hit seal and it starts sucking. Once the air is out, it keeps sucking and starts pulling that residual moisture. I think that was filling the trough and causing problems. So what I did this weekend was once all the air was out and I could see the moisture start to be pulled, I'd hit the "seal" button to finish it.

You can also put a folded paper towel before the seal and it will catch the water and prevent the seal from getting messed up.

I've never had that problem. The reservoir gets some fluid, but not enough to fill it. If it would get full, I'd just dump it and keep going. It doesn't pull out enough of the moisture from the fish or meat to affect the quality, but not sucking all the air out, will definitely affect the quality if frozen long enough for freezer burn to get to the protein.
