Exercises to do with a coonhound mix

I don't hunt, but I've got a half Redbone Coonhound that I think would love to do.... coonhound things. My lab-mix loves to fetch, but the hound gets bored with it after a couple throws. So I feel bad just having her watch me throw a ball for her brother. So are there any good "tracking" games we can play in the back yard? How should I get started with her? (Paging B&TCoonhound?)

get some coon scent and put a little on a training dummy...drag it in a nice long trail and have it end somewhere that you have stashed a treat the the dog likes...when he finds it, he gets the treat and praise from you...
I think that would actually be a pretty fun game to play with any hound dog...
