Mac & Cheese trick for the FDB

However you make your mac & cheese, add a lil bit (2-3 drops or to taste) of good quality fish sauce before you finish seasoning the sauce. Squid brand from any Asian Market in town works. You will impress your mother-in-law.

By good quality I mean one that is clear amber color and free of fish debris. Whichever brand you like should work fine.

It won't taste like fish unless you add too much. The fish sauce "tricks" your brain into tasting more flavor from the cheese, kinda like vanilla makes chocolate taste more like chocolate. It works...

You can also add a little crab boil to the pasta water if you want to flavor the pasta. A little goes a long way.
