Where do they farm raise specs at? Haven't heard of that before. Unless it's a new thing. Trout coming out of Mexico has always been wild trout from what I gathered. We used to buy truck loads of tuna out of Mexico and had a contact to buy wild speckle trout from similar areas where we got the tuna.

Texas. Texas has a huge farming industry at the moment.

Unless the specks specifically say wild caught, they are now farm-raised to meet demands. Restaurants where they are a mainstay on the menu usually buy them in bulk as farm raised. Or they are using swai. (Some also use swai to substitute for catfish as well.)

And yes, wild caught is usually from Mexico. Very little actual fish comes from Louisiana anymore. Our guys are shipping them elsewhere for more money, leaving us to have to import.

Shrimp and oysters are still local. As are crab. But crab season has been sucking lately because the crabbers are sending there wares to Maryland at the beginning of the season to get more money.
